Skinny Grub: Winter Squash at Bar Bombón

Last week, we started a new series, called “Skinny Grub”, spotlighting healthier dishes at Philadelphia restaurants throughout the month of January (and possibly beyond). If you’re opting to eat better for health reasons or just looking for healthier food dishes that don’t skimp on taste, we got you covered. We kicked off the series with two “de-lightful” dishes from Liberté Lounge at Sofitel Hotel.

Today’s spotlight is on Bar Bombón, located in the heart of Rittenhouse Square at at 133 S. 18th Street. In case you’ve been living under a rock, Bar Bombón is a bar/restaurant specializing in plant-based food with Latin flavor. Healthy isn’t just a menu add-on for them, it is their mission and raison d’etre. BB is owned by the same people behind Hip City Veg, a local fast-growing fast-casual plant-based chain. It makes sense that we’d want to feature them in this series.

While everything on the menu sounds absolutely crave-worthy, we’re featuring the Winter Squash dish because of the main ingredient’s seasonality.

This colorful, warm & hearty dish ($15) includes squash confit with black beans, braised collard greens, and pumpkin seeds. Sounds satisfying and flavorful!

As the name suggests, Bar Bombón also serves veg-friendly cocktails. We suggest pairing this dish with the La Manzana Margarita (tequila blanco, apple, orange liqueur, lime, winter spice) or Dirty Derby (bourbon, mango, mint, lemon). 🙂
