
August Update: Beginning August 1 and through August 28, the pop-up will have new hours of operation: Fridays and Saturdays from 4 p.m. to 10 p.m., and Sundays 12 p.m. to 4 p.m.
Aqimero, the Latin-inspired restaurant by Chef Richard Sandoval in Philadelphia, has announced the launch of its first-ever summer indoor pop-up Rosé Garden, opening Friday, May 20, 2022.
The Rosé Garden is designed to be a multisensory experience, transporting guests to the seaside of Mexico’s Baja Coast as they sit underneath a canopy of bougainvillea enjoying a crisp glass of rosé and Latin-centric light bites.
“Food tells the greatest story – it has a number of varying complexities brought forth through our different senses; it’s also a story rooted in a history, inextricably linked to other cultures,” said Richard Sandoval, world-renowned chef and restaurateur and owner of Richard Sandoval Hospitality. “These past few years, however, have inhibited many people’s access to travel and dining. With this new pop-up concept, we’re providing guests an escape from the ordinary, merging sight and taste of traveling to the Baja Coast as though they were there themselves.”

The Rosé Garden’s drink menu features a robust wine list, a rosé flight and rosé-forward libations including the Petal Paloma (Patrón Silver, lime, rosé simple and Fever-Tree Grapefruit), Watermelon Basil Mule (Grey Goose Essences Watermelon & Basil, lime and ginger beer) and Strawberry Frosé (Côté Mas rosé, elderflower liquor and macerated strawberries). Groups can sip and share handcrafted punches created with fresh fruits and botanicals and served in vintage punch bowls.

The bites menu, exclusive to the pop-up, blooms with rosé-inspired Latin sharing plates showcasing seasonal ingredients, such as Rosé Ceviche (dragon fruit, coconut, lychee, lime, guero chili, jicama and leche de tigre), Garden Guacamole (spicy coulis, salami chicharrón and edible flowers) and Chilled Oysters (rosé and tomato mignonette foam). Desserts include a Truffle Flight (cabernet, champagne and chocolate) and Paleta y Prosecco (Lil’ Pop Shop popsicle served in a glass of Chandon Brut).

The pop-up garden will also uniquely include a living bar bursting with herbs that will serve as garnish for guests’ food and beverages.
Guests will also be able to take their pop-up experience home with them through the Rosé Garden retail store, which will offer items such as custom-branded chocolate truffles, candles, preserved floral bouquets and more.
“We are excited to bring such a unique experiential dining opportunity to Philadelphia,” said Ronde Murphy, Aqimero’s executive chef. “With the summer heat we are sure to endure in the city, the Rosé Garden will be a refreshing and welcomed reprieve for guests.”
The Rosé Garden is open Wednesdays through Fridays from 4 p.m. – 10 p.m., Saturdays 2 p.m. – 10 p.m. and Sundays 12 p.m. – 4 p.m. through July 17, 2022.
