After a long day at work, the last thing I want to do is spend hours cooking dinner. In fact, I’m all about making a meal that takes less than 30 minutes when I’m home so there’s more time to relax at night! I get home before my hubby does so I almost always make dinner as he comes home 30 minutes after I do. Oftentimes, I pre-plan what we’ll have. Other times, I let whatever ingredients we have on hand inspire what I make. I really do love to improvise, though.
My original goal for this dish was to make nachos with Mrs. T’s Mini Pierogies instead of tortilla chips, inspired by this recipe here. I had most of the ingredients to accomplish this dish, but it came out more like a taco salad — with pierogies — than nachos. And you know what? I’m okay with that because it was delicious! More about that in a bit; here’s how it all came together.
First thing I did was prep the veggies. I kept it very simple. I diced up a tomato, a little purple onion, and a ripe avocado. I sliced a handful of black olives, too. I love black olives. But you can throw in black beans or another vegetable if you wish.
Then, I sautéed some ground beef in a little olive oil and sprinkled some taco seasoning on it. Again, very simple.
Finally, I prepared a box of Mrs. T’s Mini Four Cheese Pierogies. First, I boiled them for 3 minutes, then pan-fried them on medium for about 5 minutes. Just enough time for them to become a little crispy on the outside.
I arranged the pierogies on a plate and added the ground beef, finely grated cheddar cheese, diced tomatoes, onions, olives, and avocado on top. I also chopped up a generous handful of flat-leaf parsley and threw that on top. I was going to add a couple of dollops of sour cream but decided that the dish looked so fresh and delicious on its own so I omitted the sour cream. Salsa would have also worked, but I was happy with just the fresh tomatoes.
This turned out not only to be a quick and delicious meal but also very fresh and healthy too! Both hubby and I were quite pleased and satisfied with this weeknight meal that was a snap to make leaving us with plenty of after work downtime.
We are HUGE fans of Mrs. T’s Pierogies and have them quite often as weeknight meals. Usually, I sautée them in a little butter with onions and call it a day, but then there are other times I fancy it up. I’ve made pizza-style pierogies with pepperoni and mozzarella cheese as well as like a lasagna-style pierogies with ground beef, tomato sauce, and mozzarella cheese.
