Brick & Mortar's Chef Brian Ricci Presents St. JAWN Dinner

BRICK and MORTAR’s Executive Chef Brian Ricci explores his love of British culture and fondness for Chef and critically-acclaimed cookbook author Fergus Henderson’s Michelin star rated London restaurant St. JOHN with a special two-day event — St. JAWN— featuring a myriad of dishes inspired by and celebrating Henderson’s nose-to-tail philosophy, Weds, Nov 18 and Thurs, Nov 19.

Dishes include Grilled Marinated Calves Hearts; Sorrel, Chicory & Crispy Pig Ear Salad; “Bath Chaps” (a form of headcheese); Beet, Red Onion, Red Cabbage, Crème Fraîche & Chervil; Roasted Bone Marrow & Parsley Salad; Cold Roast Beef and Dripping Toasts; and more. Desserts come in the way of Eccles Cakes and Dr. Henderson’s Ice Cream — house-made crème de menthe and Fernet ice cream inspired by Henderson’s father’s favorite drink.

“I spent a lot of time in London as well as Scotland. I really enjoy how they don’t apologize for what they choose to eat. They make the most of the little things, whether super fatty foods, or indulgent things. I love that about their culture,” Ricci said. “I’ve wanted to do something like this for awhile, but I wanted to be able to put a lot of effort into it.”

In addition to Chef Ricci’s St. JOHN-inspired dishes, Lead Bartender Christina Rando will be on-theme with cocktails inspired by favorites from the bar of St. JOHN.
