Today’s “skinny grub” is the Winter Super Grain Salad from the Vegan menu at Harvest Seasonal Grill.
This ultra-healthy salad consists of nutrient-rich ancient grains such as quinoa, farro, and freekah; “superfoods” like Tuscan kale, pomegranate seeds, and toasted almonds as well as Moroccan carrots, feta, tangerine mint yogurt, and toasted pumpernickel breadcrumbs drizzled with ginger carrot hummus vinaigrette.
If that doesn’t scream healthy, I don’t know what does! Everything on the menu is 500 calories or under, so why not order an appetizer too? The Edamame 3 Ways or Roasted Vegetable Board sound like the way to go.
The added bonus of Dave Magrogan’s Harvest Seasonal Grill is that they boast a respectable wine list and wine is good for you, after all! So have a glass or two. I won’t judge. 🙂
