Ramps are one of those hyper-seasonal ingredients you can only find for a few weeks every spring. This wild leek gets chefs in Philadelphia excited to use its bold, garlicky kick in their dishes. Both chefs and foodies really appreciate the short time they get to enjoy them, often sharing their favorite recipes and experiences on social media, which creates a lot of hype. Here are some places ramping it up for ramps!
Spring Gnocchi at Stina

Chef Bobby Saritsoglou of Stina brightens his Greek-leaning Mediterranean menu with a spring gnocchi that spotlights homemade ramp pesto, fresh peas, asparagus, and pickled ramps, and is topped with smoked trout roe.
He says, “Each spring, I look forward experimenting and cooking with ramps, because they elevate the aromatic experience of spring dishes, whether used as the main spotlight or as a complement.”
Ramp & Spring Onion Pie at Corio
This spring, ramps take the spotlight in Corio’s monthly pizza special, the Ramp & Spring Onion Pie. Chef David Feola tops his signature pizza dough with locally sourced ramps, buffalo mozzarella, spring garlic, and finishes it with a homemade ramp aioli. While their pizza specials are typical for an entire month, the Ramp & Spring Onion Pie will only be available for the first three weeks of May, while ramps are still in season.
Ramp & Balsamic Vinegar Gin Shot at Wilder

Beverage Director Tom Brander of Wilder makes unique usage of ramps by creating an oyster shooter with a ramp and a balsamic vinegar-infused gin shot. Wilder sources ramp gin from Isolation Proof, a New York State-based farm distillery that showcases the seasons with a quarterly release of different gins, and Brander combines it with house-made balsamic Szechuan peppercorn syrup.
“Each season, we change our oyster shooter selection to focus on current flavors, so I turned to my go-to distillery, Isolation Proof, for inspiration this spring. When I first tasted the strong savory notes of their ramp gin, I knew it would go fantastically with the balsamic Szechuan peppercorn syrup that we make in-house at Wilder,” he says.
Spring Onion Focaccia with Ramp Kimchi at Southwark
At Southwark, ramps are featured in their Spring Onion Focaccia, served with koji butter and ramp kimchi, and in their Gnocchi & Clams, where ramps, saffron oil, and house-cured pancetta elevate the fresh seafood pasta.
