Verbena, an intimate BYOB in Kennett Square, has opened under the culinary tutelage of Chef Scott Morozin. He promises a menu using only the highest quality fresh, seasonal ingredients, including as many locally as possible. The restaurant replaces the former La Madera Bistro at 102 East State Street.
I asked Chef Scott a few questions to get us all excited about the opening:
Philly Grub: What inspired you to name the restaurant Verbena? I assume lemon verbena will be featured on the menu in one way, shape or form?
Scott Morozin: I will use forms of Verbena on the menu and in the dining room as often as possible. It is a seasonal plant and herb.
PG: Will you only be open for dinner? And is it prix fixe or can people order a la carte?
SM: We will be open for prix fixe dinner only. The Valentine’s Day menu will be an a la carte menu.
PG: Certainly, seasonality and local ingredients mean a lot to you. How often do you plan on updating the menu?
SM: Seasonality is of course important but if I have to use west coast or mid west ingredients they are of high quality. For example: California raspberries are superb right now. I will change my menu as often as I have in the past; about every 2 weeks something will change so surprises are expected.
PG: Why should people choose Verbena in Kennett Square as a must-visit destination for dining?
SM: I have and will continue to use as many people and services as I can. I want to be an integral part of a positive community. Local farmers markets and being in a farming state just feels natural. I’m constantly looking for new products and new ways to cook them. And simply because Kennett is awesome!
