In the coming weeks, owner Townsend Wentz will debut his second restaurant, A Mano, a casual Italian BYOB in the city’s beautiful Fairmount neighborhood. The comfortable restaurant will serve ingredient-driven fare from across Italy from Executive Chef Michael Millon, who has worked with Chef Wentz for 10 years and recently spent time at Manhattan’s Michelin-starred Italian restaurant, A Voce, on Columbus Circle.
A Mano will serve an approachable menu of Italian cuisine, drawn from all of the distinctive regions of the country. The restaurant’s culinary focus is broad, moving from northern to southern Italy to reflect the freshest products available in Philadelphia throughout the year; guests can expect everything from Calabrian chiles to egg-based pastas with hearty sauces native to Emilia-Romanga to house-made cotechino sausage from Modena.
When the restaurant opens this winter, dishes inspired by northern Italy, including Alto Adige, will play a larger role; as the temperature rises and other ingredients become available locally, the menu will explore more of southern Italy.
While Chef Wentz will primarily remain in his kitchen at Townsend, he will work on menu development with Chef Millon at A Mano. Chef Millon has been an integral part of Townsend’s team, and is a natural choice to helm the kitchen at A Mano, who was a sous chef at Townsend for a spell.
